In a small bowl, mix ricotta cheese with a pinch of salt, pepper, and Italian herbs if using, creating a creamy, flavorful spread.
Lay a cooked lasagna noodle flat on a clean surface or in your hands, then spread a spoonful of ricotta mixture over it, spreading evenly.
Add a spoonful of marinara sauce on top of the ricotta, then sprinkle with shredded mozzarella for gooeyness.
Roll or fold the noodle with layers inside, creating a compact bundle that holds the fillings together.
Repeat with remaining noodles and fillings to assemble 2–3 pieces, then place them inside a small baking dish or ramekin.
Spoon any remaining marinara and cheese over the top of the assembled lasagna fitta, then sprinkle with extra mozzarella for a golden crust.
Preheat the air fryer to 375°F (190°C). Carefully place the ramekin or baking dish into the air fryer basket.
Cook for about 12–15 minutes until the cheese is bubbling and golden brown around the edges, and the dish is heated through.
Use tongs or a spatula to carefully remove the hot lasagna fitta from the air fryer. Let it cool for a couple of minutes until it’s safe to handle.
