Ingredients
  

  • 1 1/2 cups all-purpose flour sifted
  • 2 tablespoons sugar optional
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs beaten
  • 1 cup milk any kind
  • 1/4 cup unsalted butter melted
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat your oven to 375°F (190°C) and lightly grease your baking dish or muffin tin.
  2. In a large mixing bowl, whisk together the sifted flour, sugar, baking powder, and salt until well combined.
  3. In another bowl, beat the eggs and then stir in the milk, melted butter, and vanilla extract until the mixture is smooth and slightly frothy.
  4. Pour the wet ingredients into the dry ingredients and gently fold them together until just combined; do not overmix, as a few lumps are okay.
  5. Spoon the batter into the prepared baking dish or evenly distribute into muffin cups, filling each about 3/4 full.
  6. Bake in the preheated oven for 18-20 minutes, or until the bites are puffed, golden on the edges, and a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let them cool slightly— they should be airy, with crispy edges and a soft, custardy interior.
  8. Serve warm, optionally topped with syrup, fruits, or chocolate chips for extra flavor and texture.
