Ingredients
  

  • 1 loaf ciabatta bread halved lengthwise
  • 2 large ripe tomatoes sliced into rounds
  • 8 oz fresh mozzarella sliced
  • 8 leaves fresh basil whole leaves
  • 3 tbsp olive oil for basil-infused oil
  • 1 pinch salt optional, to taste
  • 1 pinch black pepper optional, to taste

Method
 

  1. Slice the fresh mozzarella into thin, even rounds and set aside.
  2. Wash the tomatoes and slice them into rounds roughly the same thickness as the cheese slices.
  3. Chop the basil leaves coarsely and place them in a small bowl. Pour the olive oil over and gently stir to infuse the oil with basil aroma. Let sit for a few minutes.
  4. Cut the ciabatta loaf in half lengthwise using a bread knife, revealing a soft interior and rustic crust. Lightly toast the cut sides if you prefer a crunchier texture.
  5. Spread the basil-infused olive oil generously over the cut sides of the bread, covering all the surfaces to add flavor and moisture.
  6. Layer the mozzarella slices evenly on the bottom half of the bread, overlapping slightly to cover the surface.
  7. Add the tomato slices over the mozzarella, arranging them in a single layer for an even presentation.
  8. Place the fresh basil leaves on top of the tomato slices, allowing their fragrant aroma to mingle with the other ingredients.
  9. Close the sandwich with the top half of the ciabatta, pressing down gently to help the layers settle.
  10. Use a sharp knife to cut the sandwich into halves or quarters for easier handling and attractive plating.
