  • 4 slices day-old baguette or ciabatta bread or any crusty bread, sliced thick
  • 8 oz fresh mozzarella sliced into thick rounds
  • 2 ripe tomatoes sliced into rounds
  • 1/4 cup fresh basil leaves whole or torn
  • 2 tbsp extra virgin olive oil for drizzling
  • to taste salt and freshly ground black pepper for seasoning

Method
 

  1. Preheat your toaster or grill pan until hot and toasted bread slices until golden brown and crispy.
  2. Lay out the toasted bread slices on a serving plate and drizzle them lightly with extra virgin olive oil to add a shiny finish and flavor.
  3. Arrange slices of fresh mozzarella on half of the bread slices, covering them evenly for a creamy, melt-in-your-mouth layer.
  4. Layer the tomato slices on top of the mozzarella, overlapping slightly for vibrant color and juiciness.
  5. Tuck basil leaves between the tomato slices, distributing them evenly to release aromatic herbal notes with each bite.
  6. Season the layered ingredients with a pinch of salt and freshly ground black pepper to enhance the flavors.
  7. Place the remaining bread slices on top to complete the sandwich, pressing down gently to help the layers stick together.
