Method
- Whisk together olive oil, lemon juice, honey, minced garlic, salt, and black pepper in a small bowl to create a bright marinade.
- Thread a cherry tomato, a mozzarella ball, and a basil leaf onto each skewer in an alternating pattern, creating colorful mini bouquets.
- Place the assembled skewers into a shallow dish and pour the marinade over them, ensuring they’re evenly coated. Let them sit for about 10 minutes to absorb the flavors.
- Preheat the grill or grill pan over medium-high heat until hot, and lightly oil the grates to prevent sticking.
- Arrange the skewers on the grill in a single layer, and cook for about 2-3 minutes until the cheese begins to soften and the tomatoes start to burst.
- Flip the skewers gently and grill for another 2 minutes, allowing light charring and smoky marks to develop, which enhances flavor and appearance.
- Remove the skewers from the grill and transfer them to a serving platter. Drizzle with any remaining marinade for extra flavor.
- Garnish with additional basil leaves if desired, and serve immediately for a fresh, flavorful appetizer or light meal.
Notes
For extra flavor, sprinkle with flaky sea salt or drizzle with balsamic reduction before serving.
