Ingredients
  

  • 8 ounces fresh mozzarella balls small, bite-sized
  • 16 cherry cherry tomatoes preferably red or heirloom varieties
  • 20 fresh basil leaves basil leaves whole leaves, stems removed
  • 1/4 cup olive oil extra virgin recommended
  • 2 tablespoons fresh lemon juice brightens the marinade
  • 1 tablespoon honey optional, adds sweetness
  • 1 clove garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. Whisk together olive oil, lemon juice, honey, minced garlic, salt, and black pepper in a small bowl to create a bright marinade.
  2. Thread a cherry tomato, a mozzarella ball, and a basil leaf onto each skewer in an alternating pattern, creating colorful mini bouquets.
  3. Place the assembled skewers into a shallow dish and pour the marinade over them, ensuring they’re evenly coated. Let them sit for about 10 minutes to absorb the flavors.
  4. Preheat the grill or grill pan over medium-high heat until hot, and lightly oil the grates to prevent sticking.
  5. Arrange the skewers on the grill in a single layer, and cook for about 2-3 minutes until the cheese begins to soften and the tomatoes start to burst.
  6. Flip the skewers gently and grill for another 2 minutes, allowing light charring and smoky marks to develop, which enhances flavor and appearance.
  7. Remove the skewers from the grill and transfer them to a serving platter. Drizzle with any remaining marinade for extra flavor.
  8. Garnish with additional basil leaves if desired, and serve immediately for a fresh, flavorful appetizer or light meal.

Notes

For extra flavor, sprinkle with flaky sea salt or drizzle with balsamic reduction before serving.
