  • 4 pieces chicken breasts boneless and skinless
  • 2 cups fresh basil leaves
  • 4 oz mozzarella cheese sliced
  • 2 tablespoons balsamic vinegar

Method
 

  1. Pat the chicken breasts dry with paper towels and season both sides generously with salt and pepper.
  2. Heat olive oil in a skillet over medium heat until shimmering, and carefully place the chicken breasts in the pan. Cook for about 6-7 minutes on each side until golden brown and cooked through.
  3. Once the chicken is cooked, reduce the heat to low, then top each breast with slices of mozzarella cheese. Cover the skillet briefly to help the cheese melt into a gooey layer.
  4. While the cheese melts, chop or tear fresh basil leaves into small pieces to release their aroma.
  5. Remove the skillet from heat once the cheese is melted and bubbly. Drizzle the balsamic vinegar over the chicken breasts, allowing it to reduce slightly and form a glaze.
  6. Scatter the fresh basil over the top of the chicken, releasing a fragrant burst of herbs.
  7. Transfer the chicken to plates and spoon any remaining balsamic glaze from the skillet over the top for extra flavor.
  8. Serve hot, pairing the tender chicken with melty cheese, fresh basil, and a tangy balsamic drizzle for a complete, flavorful bite.
