  • 1 package sheet puff pastry thawed if frozen
  • 8 ounces brie cheese cut into small pieces
  • 1 cup fresh cranberries cranberries can use thawed frozen
  • 1 tablespoon honey honey for drizzling
  • 1 teaspoon fresh thyme or rosemary fresh herbs optional, for garnish

Method
 

  1. Preheat your oven to 180°C (350°F). Lightly flour a clean surface and roll out the puff pastry sheet to smooth out creases.
  2. Use a cookie cutter or a glass to cut out small circles from the pastry, about 2 inches in diameter. Gently press each circle into the cups of a mini muffin tin to form little pastry cups.
  3. Place the muffin tin in the oven and bake for about 8 minutes, just until the pastry begins to turn lightly golden and crisp.
  4. Remove the tin from the oven and carefully press a small piece of brie into each pastry cup. Distribute evenly to ensure each bite has a rich, melty cheese core.
  5. Top each cheese-filled pastry with a few cranberries, pressing them gently into the brie so they stay in place during baking.
  6. Return the muffin tin to the oven and bake for another 12-15 minutes, until the pastry is golden brown, the cheese is bubbling, and the cranberries are soft and bursting with juice.
  7. Once baked, remove the bites from the oven and let them rest for about 5 minutes. Drizzle with honey and sprinkle with fresh herbs if desired for an extra touch of flavor and visual appeal.
  8. Gently transfer the bites from the muffin tin to a serving platter. Serve warm or at room temperature, enjoying the crispy pastry, creamy cheese, and tart cranberries in every bite.

Notes

For a more pronounced flavor, sprinkle some fresh thyme or rosemary into the pastry before baking. To make ahead, assemble the bites and refrigerate before baking; reheat in the oven to regain crispness.
