- Preheat your oven to 180°C (350°F). Lightly flour a clean surface and roll out the puff pastry sheet to smooth out creases.
- Use a cookie cutter or a glass to cut out small circles from the pastry, about 2 inches in diameter. Gently press each circle into the cups of a mini muffin tin to form little pastry cups.
- Place the muffin tin in the oven and bake for about 8 minutes, just until the pastry begins to turn lightly golden and crisp.
- Remove the tin from the oven and carefully press a small piece of brie into each pastry cup. Distribute evenly to ensure each bite has a rich, melty cheese core.
- Top each cheese-filled pastry with a few cranberries, pressing them gently into the brie so they stay in place during baking.
- Return the muffin tin to the oven and bake for another 12-15 minutes, until the pastry is golden brown, the cheese is bubbling, and the cranberries are soft and bursting with juice.
- Once baked, remove the bites from the oven and let them rest for about 5 minutes. Drizzle with honey and sprinkle with fresh herbs if desired for an extra touch of flavor and visual appeal.
- Gently transfer the bites from the muffin tin to a serving platter. Serve warm or at room temperature, enjoying the crispy pastry, creamy cheese, and tart cranberries in every bite.
Notes
For a more pronounced flavor, sprinkle some fresh thyme or rosemary into the pastry before baking. To make ahead, assemble the bites and refrigerate before baking; reheat in the oven to regain crispness.
