Ingredients
  

  • 2 cups cucumber, sliced preferably seedless or English cucumber
  • 2 ripe avocados, pitted and diced choose ripe but firm avocados
  • 1 lime lime, juiced for the dressing
  • 2 tablespoons olive oil
  • 1 tablespoon fresh cilantro, chopped optional garnish

  • to taste black pepper freshly ground preferred

Method
 

  1. Slice the cucumber into thin rounds or half-moons and place them in a large mixing bowl.
  2. Add the diced avocados to the bowl with the cucumber slices.
  3. In a small bowl, whisk together freshly squeezed lime juice, olive oil, a pinch of salt, and black pepper until well combined.
  4. Pour the dressing over the cucumber and avocado mixture and gently fold to coat all pieces evenly.
  5. Sprinkle chopped cilantro on top for a burst of freshness and color.
  6. Give the salad one final gentle toss to distribute the cilantro and seasoning, then serve immediately for the freshest texture.
