  • 2 medium zucchini sliced into rounds
  • 1 tablespoon olive oil
  • 2 cloves garlic minced

Method
 

  1. Heat olive oil in a skillet over medium heat until shimmering.
  2. Add the ground turkey to the skillet, breaking it apart with your spatula. Cook until it turns golden brown and develops a slight crust, about 5–7 minutes.
  3. Stir in the minced garlic and cook just until fragrant, about 30 seconds. The mixture will take on a savory aroma.
  4. Add the sliced zucchini to the skillet, spreading it evenly over the meat. Cook for about 3–4 minutes, allowing the zucchini to start softening and release some water.
  5. Stir everything together, ensuring the zucchini is coated with the turkey and garlic. Continue cooking until the zucchini is tender and water has mostly evaporated, about 5–6 minutes, stirring occasionally.
  6. Season with salt and pepper to taste, and cook for another minute to blend the flavors.
  7. Turn off the heat and let the dish rest for a minute. Serve hot, enjoying the savory flavors and tender zucchini with bits of crispy browned turkey.
