Gather your equipment: blender, measuring cups, popsicle molds, and a small knife.
Use the small knife to cut the fresh pineapple into chunks. Aim for about 2 cups of fruit for a smooth, flavorful base.
Place the pineapple chunks into the blender, add the bruised mint leaves, honey or agave syrup, and a squeeze of lime juice.
Blend everything until the mixture is smooth with a few small pineapple bits remaining for texture. Smell the herbal aroma and taste to adjust sweetness if needed.
Pour the vibrant yellow mixture into your popsicle molds, leaving about a quarter inch at the top for expansion during freezing.
Insert the sticks or covers into the molds and place them in the freezer. Let them freeze for at least 4 hours or overnight for best results.
Once frozen solid, run warm water over the outside of each mold for a few seconds to loosen the popsicles.
