Ingredients

  • 1 pound fresh strawberries hulled and halved
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon fresh mint chopped finely

Equipment

  • Medium saucepan
  • Wooden spoon or silicone spatula

Method

  1. Place the strawberries into a medium saucepan and begin cooking over medium heat.
  2. As the strawberries warm, use a wooden spoon to mash some of them, releasing their juices and creating a slightly chunky mixture.
  3. Add the lemon juice to the saucepan, stirring to combine. The mixture should start simmering gently with a fragrant citrus aroma.
  4. Reduce the heat to low and let the sauce simmer, stirring occasionally, for about 10-15 minutes until the strawberries break down further and the sauce thickens slightly.
  5. Stir in the chopped mint, allowing the herbal aroma to infuse into the sauce for a couple of minutes.
  6. Remove the saucepan from the heat and let the sauce cool slightly; it will thicken more as it cools, developing a glossy appearance.
