Ingredients

  • 2 cups mango, peeled and julienned ripe but firm
  • 1 large cucumber, peeled and julienned seedless preferred
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons fresh lime juice
  • 1 small red chili, finely chopped optional for spice
  • 1 tablespoon honey or agave syrup optional, for balance
  • Salt and pepper to taste to taste

Equipment

  • Chef’s knife
  • Julienne peeler or mandoline
  • Mixing bowl
  • Whisk
  • Serving Spoon

Method

  1. Begin by peeling the mango and cucumber, then julienne both into thin strips so they look like matchsticks—this helps maximize crunch and visual appeal.
  2. Add the julienned mango and cucumber to a large mixing bowl. Toss them gently to combine.
  3. Finely chop the fresh cilantro and sprinkle it over the fruit and vegetable mixture, giving a fresh, herbal aroma.
  4. In a small bowl, whisk together lime juice, honey (or agave), and a pinch of salt and pepper until the dressing is smooth and slightly cohesive.
  5. Pour the dressing over the slaw mixture and toss everything carefully so that each piece is evenly coated and flavorful.
  6. If desired, sprinkle the chopped chili over the top for a spicy kick, then give it a final gentle toss.
  7. Let the slaw sit for about 5 minutes. This allows the flavors to meld and the crispness to soften slightly while maintaining freshness.
  8. Transfer the vibrant slaw to a serving dish and enjoy immediately, or chill for up to an hour before serving for an even cooler, refreshing taste.

Notes

For added texture, consider tossing in chopped nuts or toasted coconut flakes just before serving.
