Ingredients

  • 4 slices bacon cooked and crumbled
  • 1 cup fresh spinach chopped
  • 1 small onion finely chopped
  • 1 roll puff pastry thawed if frozen
  • 2 tablespoons fresh herbs chopped chives or parsley

Method
 

  1. Preheat your oven to 180°C (350°F) and grease your mini muffin tin to prevent sticking.
  2. Roll out the puff pastry on a lightly floured surface and cut into small circles that fit into your mini muffin cups. Gently press the pastry into each cup, making sure the edges are even and the base is flat.
  3. In a mixing bowl, whisk together eggs, cream, salt, and pepper until the mixture is smooth and slightly frothy.
  4. Chop cooked bacon, spinach, onion, and herbs into small pieces, then fold them into the egg mixture to evenly distribute the fillings.
  5. Spoon the filling mixture into each pastry-lined muffin cup, filling about three-quarters full to leave room for the filling to expand.
  6. Sprinkle shredded cheddar cheese on top of each filled pastry cup for a melty, cheesy crust.
  7. Bake in the preheated oven for 15–20 minutes, until the tops are golden brown and the filling is just set with a slight wobble in the center.
  8. Remove the mini quiche bites from the oven and let them rest in the tin for 5 minutes to settle.
  9. Gently transfer the bites to a wire rack to cool slightly, or serve warm for maximum flavor and creaminess.
