  • 1 cucumber deseeded and diced
  • 0.5 red onion finely chopped
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 lemon lemon juiced and zested
  • 2 tablespoons fresh herbs chopped, such as parsley or basil
