Ingredients

  • 200 g crushed chocolate cookies about 15-20 cookies
  • 100 g unsalted butter melted
  • 200 g dark chocolate chopped
  • 250 ml heavy cream whipped to soft peaks
  • 2 tbsp granulated sugar

Equipment

  • Mixing bowl
  • 9-inch pie dish
  • Spatula
  • Refrigerator

Method

  1. Combine the crushed cookies and melted butter in a mixing bowl, mixing until the crumbs are evenly coated and resemble damp sand.
    200 g crushed chocolate cookies, 100 g unsalted butter
  2. Press this mixture firmly into the bottom and up the sides of a 9-inch pie dish, creating an even crust. Chill in the refrigerator for about 15 minutes to set the base.
  3. Place the chopped dark chocolate in a heatproof bowl and melt it gently over a double boiler or in short bursts in the microwave, stirring until smooth and glossy.
    200 g dark chocolate
  4. In a separate bowl, whip the heavy cream with the granulated sugar until soft peaks form, resulting in a fluffy, airy texture.
250 ml heavy cream, 2 tbsp granulated sugar
  5. Gradually fold the melted chocolate into the whipped cream mixture, combining gently until the filling becomes smooth and uniform in color.
250 ml heavy cream, 200 g dark chocolate
  6. Pour the chocolate filling into the prepared crust, smoothing the top with a spatula for an even surface.
  7. Refrigerate the pie for at least 4 hours or until the filling is firm and set, allowing the flavors to meld and the texture to develop.
  8. Once chilled, slice the pie with a sharp knife, revealing the rich, velvety interior contrasted by the crumbly crust.

Notes

For added flavor, sprinkle sea salt or chili flakes on top before serving. The pie can be decorated with chocolate shavings or chopped nuts for extra texture.
