Method
 

  1. Heat the wok or skillet over medium-high heat and add the vegetable oil. Once shimmering, add the ground pork and spread it out evenly to sear.
  2. Use a spatula to break the meat apart, stirring constantly until it turns golden brown and begins to caramelize around the edges, releasing a fragrant aroma.
  3. Add the minced garlic and grated ginger to the pan, stirring quickly so they become fragrant and softer, about 30 seconds. The mixture should smell warm and spicy.
  4. Pour in the soy sauce and sprinkle the brown sugar over the pork, stirring to coat everything evenly. The sauce will thicken slightly as it cooks, turning glossy and deep in color.
  5. Continue stir-frying for another 2-3 minutes, allowing the flavors to meld and the sauce to coat the meat generously, creating a shiny, flavorful glaze.
  6. Remove from heat and transfer to a serving dish. Serve hot, garnished with chopped green onions or sesame seeds if desired.
