  • 1 lb ground turkey preferably lean
  • 2 medium zucchini sliced into thin rounds
  • 3 cloves garlic minced
  • 1 tsp dried thyme
  • 2 tbsp olive oil
  • to taste salt and black pepper for seasoning

Method
 

  1. Heat a tablespoon of olive oil in a skillet over medium heat until shimmering and fragrant.
  2. Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes, until it develops a nice sear.
  3. Create a space in the skillet and add the minced garlic. Sauté for about 30 seconds until fragrant, stirring into the meat.
  4. Add the sliced zucchini to the skillet, spreading them evenly over the meat. Cook for about 3-4 minutes, until they start to turn golden around the edges.
  5. Sprinkle the thyme, season with salt and pepper, then stir everything together. Cook for another 5-6 minutes, stirring occasionally, until the zucchini is tender but still has some bite.
  6. Adjust seasoning as needed and cook for a final 2-3 minutes to let the flavors meld. The zucchini should be golden and tender with a slight crisp on the edges.
  7. Turn off the heat and let the dish rest for a minute. Serve hot directly from the skillet for a rustic, comforting presentation.
