  • 16 pieces Medjool dates pitted
  • 4 oz cream cheese softened for easy filling
  • 1/4 cup roasted almonds halved or whole
  • 4 oz smoked bacon cooked until crisp and crumbled
  • 1/2 tsp smoked paprika

Method
 

  1. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. Using a small knife, carefully slice each date lengthwise to create an opening, then remove the pit gently.
  3. Fill each pitted date with about a teaspoon of softened cream cheese, pressing gently to fill evenly.
  4. Place a roasted almond inside each filled date for added crunch and contrast.
  5. If using bacon, wrap a small piece around each stuffed date, securing it with a toothpick if needed.
  6. Arrange the stuffed (and wrapped, if using bacon) dates on the prepared baking sheet, spacing them evenly.
  7. Bake in the preheated oven for 10-12 minutes, until the bacon is crispy or the cheese is melted and bubbling.
  8. Remove from the oven and let rest for 2 minutes; this helps the flavors settle and makes handling easier.
  9. Sprinkle the baked dates lightly with smoked paprika for a hint of smoky warmth.
