Ingredients
  

  • 4 cups fresh spinach leaves roughly chopped
  • 1 cup breadcrumbs preferably plain or Italian style
  • 1 cup shredded cheese cheddar or mozzarella
  • 2 cloves garlic minced
  • 2 eggs eggs beaten
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil for greasing and brushing

Method
 

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking sheet with olive oil.
  2. Toss the chopped spinach in a hot skillet with a splash of olive oil and cook for 2-3 minutes until wilted. Let it cool slightly and then squeeze out excess moisture.
  3. Place the cooked spinach in a large mixing bowl. Add breadcrumbs, shredded cheese, minced garlic, beaten eggs, salt, and black pepper.
  4. Mix everything together thoroughly until you have a sticky, cohesive mixture that holds together when formed.
  5. Use your hands to scoop out small portions and roll them into uniform balls, about 1 to 1.5 inches in diameter.
  6. Arrange the formed balls on the prepared baking sheet, spacing them evenly apart.
  7. Bake in the preheated oven for about 15-20 minutes, or until the outside is golden brown and crispy.
  8. Remove from the oven and let cool slightly. Brush the tops with a little olive oil for added shine and crispness.
  9. Serve the spinach balls warm as a tasty appetizer or snack, with a side of dipping sauce if desired.
