Preheat your oven to 375°F (190°C) and lightly grease a baking sheet with olive oil.
Toss the chopped spinach in a hot skillet with a splash of olive oil and cook for 2-3 minutes until wilted. Let it cool slightly and then squeeze out excess moisture.
Place the cooked spinach in a large mixing bowl. Add breadcrumbs, shredded cheese, minced garlic, beaten eggs, salt, and black pepper.
Mix everything together thoroughly until you have a sticky, cohesive mixture that holds together when formed.
Use your hands to scoop out small portions and roll them into uniform balls, about 1 to 1.5 inches in diameter.
Arrange the formed balls on the prepared baking sheet, spacing them evenly apart.
Bake in the preheated oven for about 15-20 minutes, or until the outside is golden brown and crispy.
Remove from the oven and let cool slightly. Brush the tops with a little olive oil for added shine and crispness.
Serve the spinach balls warm as a tasty appetizer or snack, with a side of dipping sauce if desired.
