Ingredients

  • 1 cup rolled oats quick or old-fashioned
  • 2 oz cream cheese softened to room temperature
  • 3 tablespoons strawberry preserves or jam
  • 1/2 cup milk any type, optional for thinning
  • 1/2 cup Greek yogurt vanilla or plain
  • 1 teaspoon vanilla extract
  • fresh fruit for topping strawberries sliced, optional

Equipment

  • Mixing bowl
  • Spoon or rubber spatula

Method

  1. In a large mixing bowl, combine the softened cream cheese and strawberry preserves. Use a spoon or whisk to blend them together until smooth and creamy, releasing a sweet strawberry aroma.
  2. Add the Greek yogurt, milk, and vanilla extract to the bowl. Whisk everything together until well combined and the mixture is slightly thickened.
  3. Pour the rolled oats into the bowl and fold them into the wet mixture, ensuring each oat is coated with the creamy strawberry filling. The mixture should be creamy with visible swirls of strawberry preserves.
  4. Scoop the mixture evenly into two jars or containers with lids. Smooth the tops with a spoon and seal tightly.
  5. Refrigerate the jars overnight or for at least 6 hours. During this time, the oats will absorb the liquid, becoming creamy and tender, with the flavors melding together.
  6. The next morning, remove the jars from the fridge. Top with fresh strawberries or your favorite fruit and serve chilled for a refreshing, cheesecake-inspired breakfast.
