Method
- Place the watermelon cubes into a blender and blend until smooth and vibrant pink.
- Add the sugar and mint leaves to the watermelon purée, then blend again until the sugar dissolves completely and the mint is finely chopped.
- Pour the watermelon mixture into a shallow dish, spreading it out evenly to help it freeze faster.
- Place the dish in the freezer and let it freeze for about 2 hours, or until the edges start to firm up.
- Remove the dish from the freezer and use a fork to scrape the icy edges toward the center, breaking up any large ice crystals.
- Return the dish to the freezer and repeat scraping every 30 minutes for 2-3 more times, until the mixture is fluffy and crystalline.
- Once the granita has a light, flaky, snow-like texture, scoop it into glasses or bowls to serve immediately.
Notes
For extra flavor, add a few finely chopped mint leaves before freezing.
