Watermelon Granita

Watermelon granita is a frozen dessert made by blending pureed watermelon with sugar and mint, then freezing and scraping the mixture to create icy, flaky crystals. The final texture is light, crunchy, and refreshingly cold, with vibrant pink color and aromatic mint notes on top.

Ingredients
  

  • 4 cups watermelon cubes
  • 1/4 cup granulated sugar
  • a handful fresh mint leaves optional for extra flavor

Method
 

  1. Place the watermelon cubes into a blender and blend until smooth and vibrant pink.
  2. Add the sugar and mint leaves to the watermelon purée, then blend again until the sugar dissolves completely and the mint is finely chopped.
  3. Pour the watermelon mixture into a shallow dish, spreading it out evenly to help it freeze faster.
  4. Place the dish in the freezer and let it freeze for about 2 hours, or until the edges start to firm up.
  5. Remove the dish from the freezer and use a fork to scrape the icy edges toward the center, breaking up any large ice crystals.
  6. Return the dish to the freezer and repeat scraping every 30 minutes for 2-3 more times, until the mixture is fluffy and crystalline.
  7. Once the granita has a light, flaky, snow-like texture, scoop it into glasses or bowls to serve immediately.

Notes

For extra flavor, add a few finely chopped mint leaves before freezing.
